We’re wrapping up May with a delicious creamy cinnamon walnut fruit salad. Walnuts are a rich source of omega-3, which is an essential fat that helps reduce inflammation in our body and protect us from heart disease.
You’ve probably heard that omega-3 is important and you may have even heard that walnuts are an excellent source, but finding creative ways to get your omega-3 can be challenging. While I sometimes like to grab a handful or walnuts as a snack, I like getting a variety of flavors by mixing them with other foods. I created this salad as a healthy and delicious way to eat walnuts. This salad has a sweet taste, but no added sugar. That’s right the only sugar in this dish is the natural sugar from the fruit and yogurt. If you like your foods with a little extra sweetness you could add a little bit of sugar, but the dish has plenty of sweetness without it. It’s also made from whole real foods for maximal flavor and nutrition. To top it all off, it only takes a few minutes to make. Here’s what you’ll need.
1 cup of walnut halves
2/3 cup grapes (I used red ones) cut in half
1 granny smith apple cut into 1/2 inch cubes
¼ cup raisins
1 cup plain yogurt (I used regular yogurt, but if you like a more sour flavor you can use Greek yogurt)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1) Place walnuts, grapes, apple, and raisins in bowl and mix together.
2) In a separate bowl mix together yogurt, vanilla extract, and cinnamon.
3) Pour yogurt mixture over cinnamon and toss to coat.
